3 large flour tortillas, biggest you can find
1 cup shredded cheddar cheese
1 can re-fried beans
1⁄2 pound ground beef seasoned with chili powder
1 medium onion, chopped
1 tablespoon cilantro, chopped
1⁄4 cup marinated black olives, chopped
1 can diced tomatoes, drained
1⁄4 cup sour cream
1⁄4 cup jalapeno peppers, pickled
1 cup romaine lettuce, slivered
4 green onions including green stems, sliced
Salsa
Heat the re-fried beans until pliable. Mix in one-quarter of the cheddar to melt.
Brown ground beef with onions and 1⁄2 teaspoon chili powder to taste.
Place a tortilla on a pizza pan. Spread a layer of beans, then onion and tomatoes and some of the beef.
Top with another tortilla and spread with beans, cilantro, olives, peppers and half the cheese and the rest of the beef.
Top with another tortilla and finish with a bean layer, sour cream, green onions, lettuce and salsa, then the rest of the cheese.
Slice in wedges and serve on the pizza pan, with a party toothpick in each slice.
Note: For a hot version, omit the lettuce and bake 20 minutes in a 375 oven to melt the cheese.
