Yields: 6 servings
INGREDIENTS
1 (3 pound) whole chicken, cut into pieces
1 cup all-purpose flour
salt to taste (cajun seasoning contains lots of salt so go easy)
ground black pepper to taste
1 Tbs paprika
1 Tbs cajun seasoning
1 Tbs cayenne pepper
1 quart vegetable oil for frying
DIRECTIONS
Season chicken pieces with1/2 of salt, pepper, cajun seasoning
and paprika. Rub well
Add other 1/2 of mix to flour roll chicken in flour.
Add 1/2 to 3/4 inch oil to a large, heavy skillet.
Heat to approximately 365 degrees F.
Place chicken pieces in hot oil.
Cover, and fry until golden, turning once, 15 to 20 minutes.
Drain on wire rack.
Bojangles Biscuits
Ingredients:
3 cups self rising flour
3 teaspoons baking powder
2 teaspoons confectioners sugar
1/2 cup shortening
1 1/4 cup buttermilk
butter
Directions:
Mix dry ingredients. Cut in shortening.
Stir in buttermilk.
Knead a few times, roll or pat out on a board and cut with a biscuit cutter.
Bake in 450-degree oven for 12 minutes (or until golden).
Brush with butter.
Fake Buttermilk: If you do not have buttermilk on hand (Most don’t) Do go rushing to the store just yet! Here is an effective substitute for many recipes!
Ingredients:
* Milk (just under one cup)
* 1 Tablespoon white vinegar or lemon juice
Preparation:
1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.
2. Add enough milk to bring the liquid up to the one-cup line.
3. Let stand for five minute. Then, use as much as your recipe calls for.
