I genereally just throw stuff together when making fried rice, but lately it has been turning out better than normal, so i wanted to get down what i’ve been doing so i can duplicate it
Start by making rice, our family long grain, 1 cup rice, 2 cups water. Add a little salt to the water.
Chop 1lb chicken tenders into small pieces, the smaller the better. Put in a bowl with a couple tablespoons of soy sauce and let sit while cooking bacon.
Cut 5-6 slices bacon into thin strips and cook until crisp. Drain and set aside. I used to save the bacon grease and put on the rice later, but stopped doing that. It was getting too greasy. So dispose of the bacon grease.
Put a tablespoon or two of canola oil back into the pan and put chicken in. Sprinkle with onion powder and salt. About halfway through cooking add 1-2 teaspoons of chopped garlic.
If cooked before rice is done, turn off heat and let sit until rice is done.
in the mean time, beat 5 eggs with a little salt and some sesame oil.
Once rice is done, mix with chicken, bacon, and soy sauce. Probably about 1/2 cup of soy sauce but not exactly sure. Enough to turn everything a nice shade of brown. Sprinkle with 1-2 teaspoons sesame oil. Once well mixed, pat down in pan and let sit so the bottom gets browned and slightly crisp. Stir and repeat the browning process again.
Move rice to edge of pan and add a tablespoon of canola oil to pan gain and pour in eggs. Scramble eggs until nicely cooked. Stir eveything together and serve.
